Cube potatoes.
Dice onion. Heat vegetable oil on high. Add potatoes and salt heavily.
Whisk eggs until frothy.
Add onions once potatoes begin to turn golden. Drain oil with dinner plate once potatoes begin to turn crisp.
Leave a pinch of oil, or add back in, to cook the eggs. Add eggs.
Cook on high for 2 minutes.
Use a spatula to tuck in sides and make sure it doesn’t stick. Flip omelette, using dinner plate.
Cook on high for 90 seconds. Use spatula to make sure it doesn’t stick. Flip tortilla onto dinner plate. Cut into 6 even slices. Serve with mayonnaise.
