Indian Noodles with Poached Eggs

  1. Bring water to a boil in an electric kettle.

  2. In a 2 quart (small) saucepan heat canola or other neutral oil over medium-high and add grated garlic and grated ginger, stirring frequently for about a minute or until it starts to darken.

  3. Break up the noodles from 1 serving of Maggi Nutri-Licious Oats Masala Noodles and add them with the water and spice packet (included with the noodles) and stir.

  4. Gently add eggs one at a time so that they stay separated. To minimize the chance of having a broken yolk, you can crack the eggs in a bowl before adding.

  5. Let the eggs simmer for about 3-4 minutes depending on how runny you like them.

  6. Transfer everything to a bowl, add juice from 1/2 lime and top with cilantro.
